I tend to build the frame skeleton of a diagram I need from a stencil, then select all and adjust the font settings I want as base, then select any bits and pieces and adjust from that base. Then, as I proceed to work on the diagram, I option drag to copy in the diagram rather than grab new objects from stencil. 

The point at which I do the font setting is typically when I think my skeleton diagram has all the bits I'm going to need for "this picture".

In looking for a work-around for the text tool style bug, I started playing
around with invisible objects (no line, no fill). The idea would be to type
into an invisible object to get the right text style, rather than using the
text tool. I found an inconsistency in the way that style is handled. The
invisible object style shows up in the Canvas:Selection panel in the
Inspector, but does not appear in the Canvas Styles section of the Shape
tool pull-down. Is this a bug or a feature?

In any case, you can¹t easily type into an invisible shape. You can¹t
double-click it, since there¹s nothing to click. If you select it by
dragging a box around it, you still can¹t type into it. If you select it by
tabbing through all the objects, you can type into it and get the desired
default font.

For the moment, the easiest work-around I can find is to set the font of
your first text object to your desired default. Then, after you make some
text in the now-fixed-default 12 pt Helvetica, select some other text that¹s
in the desired style and drag the font chit from the style tray at the
bottom of the window to the new text object.
