Of course you can do what I did in jpegtopng and Adobe didn't do ;-)
I added the language tag "zxx" which is used for text which describes
"non-linguistic" content.  This prevents the iTXt tag being converted
into tEXt or zTXt because that would lose the information that this
isn't a natural language.
