Hi, Fred!
Just tap the stores list and go to the bottom to tap "Edit Stores..."
 From there you can rename and delete stores. It will tell you when you 
do, but note that when you delete a store, any items with no other 
assignments will become "unfiled" and need to be assigned to another 
store to appear anywhere other than Unfiled.
