The Centennial Challenges in general would probably be a good fit for
Mindstorms.

It seems the Elevator2010 competition could easily be adapted for use
with Lego and
Mindstorms (sans beam power).  Just decide on a commonly available
ribbon material (non-Lego) and some ground rules.  The competition
could be for speed or lifting capacity.
