Viton is a seal material with very food general chemical and temperature resistance. I am not sure it is necessary - I suspect most of the options you mention would work fine, but I just mention it as I know it is often used in more demanding applications. FR4 without copper is also often called G-10 (technically, G-10 may not have the full flame retardant properties of FR4, I'm not sure). McMaster-Carr carries it.
