Hi, Stuart.  Servlets would be able to do the job nicely for you.  
Check out http://tynamo.qindesign.com/ for one of a few servlet 
containers.  The learning curve for the server and for the Servlet API 
is not that steep.

If you would like to stick with Dallas' HTTPServer class, then look 
into the PostScript class, where you can handle HTTP 'POST' requests 
dynamically.
