iTunes, of course.  The hard part is getting the best quality of cover
art you can find.  I found that finding the right size and quality
picture can take as long as ripping the CD.  And updating 20-30+MB
files to include the cover art was slow (on 2.8GHz P4 laptop).

FWIW, converting the lossless on DVD to mp3 made the effort worth it.
My G5 ripped through a DVDs worth in about 15-20 minutes (mmm, seeing
iTunes convert with 40-50x rates).
