Actually, it appears that in iTunes you can select music and simply
right-click and choose "convert to MP3" at which point it will
transcode, presumably using whatever the "current" import settings are.
  So perhaps it's time to teach my daughter how to run through 800+ CDs
to import them as lossless, and then just transcode to MP3 with a
single click...

FWIW, many of us have used Tag&Rename to fix tags, but iTunes actually
provides pretty decent tag editing support, and can (optionally, if you
agree with its style) keep your music collection "organized" too (in
the file system, with paths to match the tags, including moving files
if you edit the tags).

Well, that was too easy.  Plug it in, hook it up, configure it (only
because I wanted to give it a static IP and set it to bridge since I
don't need it to do NAT or DHCP), select it as the output device in
iTunes, select some music and press "play".  Slick, and all for a
little over a hundred bucks.

Speaking of Apple and MP3 stuff, I'm planning to go to MacWorld next
week where I'm expecting to see the latest and greatest in the iPod
(accessory) space.  Now if those (hardwired to OEM stereo) adapters
would just get a little cheaper...
