Elizabeth, We're beyond anything I could claim to be an area of my expertise here but we essentially have two visual systems. The one that detects color value (i.e., levels of dark and light) but not hue is the quicker of the two. We can react to black and white stimulus more quickly than to hue. I suspect that others on this list know more than I do about this.
