I have no z/OS experience, but my sense is "is the JVM works, Tomcat
will work." If you have the option to do so, I would upgrade the JVM to
whatever is most natural in that environment as you upgrade your other
components. (I'm excited to see that you are running Tomcat 10.1 and not
something like Tomcat 6... this suggests that you have otherwise been
keeping up with the times, so your JVM is probably 11, 17, or 21, or
even 25. Java 25 is the latest LTS version and the one I would recommend.

There is very little z/OS experience here on the Tomcat mailing list,
but there is one particular community member who I know has extensive
experience and maybe he can share his wisdom with you. You may just have
to be patient for a reply, though :)
