The idea behind a label is that if you send the products of your Anthill builds outside the dev team (to QA, production, etc) eventually someone is going to come back to you and say that they have a problem with version 1.2.3. If you have been labeling the source, it will be easy to find the code that is in 1.2.3 and work from there. In fact, if you look at how the version to label translation works, you could pretty quickly recreate the artifacts the person with the problem is using and test against them.
