break out SAX/DOM from the Makefile

I think it would be useful if we had a target that expressed just the
SAX/DOM bits and a target that expressed just Aelfred. The targets
could be done by just compiling different source lists.

If anyone wants to give it a bash please do... otherwise I'll look at
it at the end of this week.
