Updating a process definition

Has anyone ever updated their process definitions while instances of the old definition exist? (Shark 1.1.2) The createProcess() method does not seem to have a version parameter that would let my code specify which version of the process definition I want to instantiate. I would assume that any new instantiation would be the latest process defintion by default. Unfortunately, I added a process variable to my new definition and, while I can instantiate one just fine using the administrator tool(because I can pick which version to use in the admin tool), when my code runs, it throws a InvalidData error on the new process variable. If I have to remove all the instantiated processes before I can update the defintion, its going to mean the end of our project.
