Since we're using oracle We saw that the value of the bean is stored in db

i.e. in the table ACTIVITYDATA in a column named VARIABLEVALUE as a blob data when VARIABLETYPE=5

All process variables are managed by Shark so yes, it is persisted. And you can of course access it using Shark classes..
