If I do unserstand you correctly you are facing a problem that is not
solved/handled in XPDL. There is no specification how process variables
are to be handled in single activities(workItems).

Since I am heading for web-deployment of Shark rather then
desktop-application I lately discovered that wfmOpen uses XForms in
extended attributes:

I don't really have a clue how it works but to mee that seems like a
smart idea at least in web-environment. Maybe it does give you some
inspiration as well.
