Ah, Neal pointed the OP at *field configurations* and NOT *screens* which is where you are looking. They are put on screens mostly for edit reasons, but on display, they are "system" fields, so they appear in pretermined places, irrespective of whether you've got them on the view screen or not. If you go to the *field configurations* you'll see a list of all fields, with a simple "hide" option. If you set a field as hidden in there, it won't appear for that project/issue-type, even if you still leave them on your screens. It'll also vanish in the system display areas.
