Templates vs. skins: setting the default

Hi,
Prior to our current (new) default template, the wiki administrator
had the ability to set the look and feel that the user would see
upon visiting the site by setting the 'jspwiki.templateDir' property
in jspwiki.properties.
With the new design there are now skins. I'm now doing almost all
of my modification work in the CSS of one or more skins. If I as an
admin/designer include multiple skin options with an installed wiki,
how can I set the *default* skin that a user sees upon first
encountering the wiki? Currently it is defaulting to PlainVanilla,
which looks like the jspwiki.org site. I'd like to remove most if
not all of the provided skins and leave several options, but have
one be the default. How? I didn't see this in the documentation, my
apologies if I've missed it.
