You are not requesting improvements to the UI
actually.  You are asking for user help.  You email
subject doesn't reflect that you actually are just
looking for help with different user issues.  I would
ask these on nbusers.  Maybe ask them as separate
questions with specific subjects.  You will get better
results.  The CPP support folks can help you with that
specific NB cluster more than others, and will be more
likely to read it if that is in the subject.  Someone
else might know how to change the menus font face, you
can change the font size with the command line switch
to NB:
--fontsize size
or you can put this in netbeans.conf to override the
default.  See
${NBInstallationDirectory}/etc/netbeans.conf
nbui is used to discuss the UI and possible changes. 
The formal way to actually file an enhancement
request, feature request, or a defect is to go to:
http://www.netbeans.org/community/issues
