I have built apps using most of those frameworks.  

Flash using SOAP, Axis, Hibernate using XDoclets, JBoss, J2EE using
Xdoclets, Eclipse, JDBC.

I am just getting into using OpenAMF for another app I am putting
together.

Everyone has their opinions, the architecture works very well and very
scalable.  A lot depends on your OOD, especially with Hibernate. 
Hibernate has its good and bad features.  I have found that it allows
many ways of approaching issues depending on what you are trying to
solve.  I really like it and would recommend it.
