Maybe take a look at our https://issues.apache.org/jira/projects/TOMEE tracker 
and see, if there is anything you might be interested in. 

Might be also a nice thing to check compiler warnings, javadoc warning or other issues a modern IDE can highlight
In our code base - would be a good thing to familiarize with building TomEE from scratch.

From a big picture, we have plenty of work todo for MicroProfile and the TCK.
But I wouldn’t say that this is „beginner-friendly“, although upgrading a MicroProfile
Spec and getting the integration to work might be a fun task ;-)
