Rewriting SDriver for a non-SQL database is certainly possible, although it has not been done before.  You might like to focus on the DML, and just stub out the DDL.

SSessionJDBC does make general assumptions about a JDBC database, such as having transactions.  If you start having to make changes there then you are taking on a substantial job.

Alternatively, just use the SDataSet layer, and completely ignore the SSession layer.  SDataSets can be used without transactions etc.

Be sure to send back any new driver you create, and we will put it in the source.  Probably wont be able to test against FileMakerPro, but will be able to ensure that it always compiles.  (Take care with external library dependencies.)
