For your first point, search for "sender" at

Message formats are highly configurable, thought you'll need to tweak the
templates.

And in the end, you can always use the old notification manager (setting
scarab.notificationmanager.classname to
org.tigris.scarab.notification.ScarabOldNotificationManager in
build.properties), though I'm not sure right now about what templates it
uses currently.
