You might also use some list fields for release and sprint, or use "modules" for every release/sprint but, IMHO, this will not scale in a real scrum environment. you better get a pair of good boards and a pile of postits, really... the key of scrum artifacts is constant visualization, constantly updated info... Even though Scarab's inner model might support what you want, the user experience will not be agile enough, IMHO again, at least not without customization.
