cmake: ffmpeg - fix QT_LINK_STUBS_TO_FFMPEG_PLUGIN typo

qt_internal_multimedia_set_stub_libraries() checked the unprefixed
LINK_STUBS_TO_FFMPEG_PLUGIN, the variable is `set` as
QT_LINK_STUBS_TO_FFMPEG_PLUGIN.

tests: use qt_internal_multimedia_add_test in all tests

tst_qiteratorfacade / tst_ffmpeg_utils did not use the
qt_internal_multimedia_add_test wrapper. While not an issue per se, we
should stay consistent
