I have tried a couple of methods.

Quick:
1. Shutdown 389 directory server: /etc/init.d/dirsrv stop
2. Remove 389 DS directories /etc/dirsrv/slapd-<your host name> and /var/lib/dirsrv/slapd-<your host name>
3. Drop databases kolab and roundcube
4. Re-run setup-kolab

This works, but I don't guarantee that your system is 100% free of leftovers

Thorough:
1. apt-get remove --purge kolab kolab-syncroton
2. apt-get autoremove --purge
3. apt-get install kolab

The second method should give you a complete reinstall.

Of course, if you run a VM, starting up with a fresh copy might really be the easiest way.
