Another option would be creating two identities that differ only in that 
for one identity you set signing key and encryption key and for the 
other identity you do not set those keys. Then you can decide whether 
you want to sign a message by switching between those two identities.

With this option you could then create a special folder for people with 
whom you want to use signing/encryption and set the corresponding 
identity for this folder.
