Binding Folders to E-mail Adresses

I filter much of my mail into folders of all mail from a particular sender. I 
would like to bind each folder to a particular e-mail address so that a right 
click of the mouse shows an option to send a message to that person.

I realise that I can achieve this by treating each person as a mailing list. 
However this is somewhat of a distortion of the terminology. Is there another 
preferred means of binding.
