Your local .desktop files do not override/replace the global ones. They 
are just used additionally to the global ones. So the global ones 
defined KMail and Kontact as providers for service type 
DBUS/ResourceBackend/IMAP and your local ones defined Kontact (again) 
as provider for service type DBUS/ResourceBackend/IMAP.
