Ask Google. KMail certainly doesn't limit the number of subfolders and 
apparently Thunderbird doesn't either.

You have the change the template used for replies in the Composer 
settings. Use something like

%CURSOR

On %ODATE, you wrote:
%QUOTE
=====

for the "Reply to Sender" template and similar for the "Reply to All / 
Reply to List" template.
