Now I tend to see concatenative programming as expressing
	a process where each stage's output is the input of the next stage.

Rather close to pipeline. In this definition, the data format is unspecified, if not irrelevant, as well as the relative format of several stages' data.
Following John's "unary functions from X to Y", pipelines seem not far away. Or do I misinterpret the intent?
