As soon as you use a unicode font, you can't convert the glyphs in the
PDF into text without help. This help is an optional map linking the
glyph to the symbol. To activate it, use the -unicodemap option, as
below.

Obviously, this increases the size of the PDF slightly, which is
perhaps why it is optional.

And yes, this had me scratching my head, too, for a couple of days last year.
