Thanks for your review, Jabiertxo The only colors that can be changed in a mesh gradient are the patch corner colors using the cairo_mesh_pattern_set_corner_color_rgb/rgba functions as described here: http://www.cairographics.org/manual/cairo-cairo-pattern-t.html Cairo doesn't provide a user interface.
