In most situations, two buffers should be fine. It has come in handy for various game ports from other systems, though. There was one game's audio engine we ported when I was at Creative where we wound up with more than ten minuscule buffers queued at a time for the music, just because that was the easiest way to port that code. That proved to be very useful across level-loads where the game's audio engine could get starved for a while.
