Consider using Mountain Lion and iCloud. Apple Apps of the Mountain Lion =
integrated variety,=20
(iWork, iPlay, etc.) will store the data In/on Icloud. ... however if =
she is using Microsoft's educational bundle, I don't believe they know =
about iCloud.

You can make iterations of the document independently via save as if you =
want.

I don't use versioning myself, but the theory is -- you can retrieve =
different "updates" of the document than the latest.
