I recently investigate this and only the Pi 4 has the ability to boot 
off a USB mass storage device (typically an SSD).  However, I tend to 
agree with the other comments about not worrying too much about wearing 
out an SD card.  If logging is relatively light and the SD card is 
relatively big, you won't likely end up with issues.

Having said that, SD cards are not generally reliable things so always 
have a backup in case yours fails and you need to rebuild it.  Consider 
running ReaR (http://relax-and-recover.org/) to make it easy to restore 
the Pi.
