I doubt about settings/parameters, but you can 'customize' your versions,
editing the code.

For kannel proprietary headers see wap-appl.c and functions
add_kannel_version
add_network_info
add_session_id
add_client_sdu_size
add_via
add_x_wap_tod

If you don't need some of thease headers just clean correspondend
functions.

For accept-charset see xml_shared.c and array character_sets
(you can remove 8859-2 - 8859-9 if you wont)
