Keeping profiles separate (Mozilla/SeaMonkey)

I'm ready to take SeaMonkey out for a spin. I figure I'll just
run it parallel with 1.7.11, so no harm if it crashes and burns.
I'll try to do as much browsing and news through SeaMonkey while
keeping primary e-mail in the Suite.
SOOO, my only question is how to keep the two from trying to
use the same profile. If SeaMonkey defaults to a different
profile location than the Suite, I'm good to go, right?
Otherwise, I guess I need to know how to wind up with Mac OS X
(10.4) Dock icons which launch the two suites with the desired
profile specified. I know how to specify target for a Windows
shortcut, just don't know the equivalent under OS X.
