I normally use Email Alchemy, from http://www.wierdkid.com

Email Alchemy will ALWAYS leave a footprint in each email, until it is
licensed, when it will leave none.

The full version only costs a few bucks, and will be WELL WORTH its purchase
price.  It will cleanly and safely convert between almost ANY email product
for Mac or PC to plain-text, which can then be imported into Thunderbird
(any version).

NOTE that this is an OS X application, and will NOT run under Windows or
Linux. I haven't tried to install it in Classic, so I can't speak for its
usability under versions of the Mac OS previous to OS X.

I truly believe that this product will save you many hours of frustration.
It surely did for me.  I can now freely and easily convert email between ALL
my various email clients.
