I regularly also have this problem (with both 7.0 and 7.02). I've noticed that the prefs.js file seems to get rewritten, and possibly even the backup version (.bak). The way I know how this has happened is that I get a welcome message as if I had just installed Mozilla. I haven't been able to correlate this with anything I have done on the system. It is a shame, that Mozilla cannot reconstruct the profile from the underlying folders. It would also make a great import tool.
