You can possibly do that by adding a custom CSS in userChrome.css in
your profile directory.

you'd need to put a customized version of the following CSS into that file:

.enigmailHeaderBoxLabelSignatureUnknown {
  background-color:#FFFFC9;
  color: black;
}
