It is very useful for asian languages encoded in UTF-8.

There is the Content-Language header for that. Yes, it certainly would 
be a good enhancement to both send the Content-Language header in our 
messages, and use it to select those element when replying.

It certainly was a reference to the character encoding guessing.

Now that I know that you are thinking about email that makes me believe 
that as we have Spell As You Type, it should be possible to try with a 
different dictionnary if the percentage of errors is too high and 
discover the correct one once the error ratio drops.
And update the language for the message based on that.
