This won't work as you'll be passing the wav filename to lame as the
bitrate. Add %b after -b (assuming you're talking about using this in
the grip config, if you try it at the command line, then use 192
instead of %b).

Similarly, when grip runs this, it will be passing lame a command line
like: lame 192 01-track.wav 01-track.mp3. Lame won't know what the
192 is for.

Correct. But you'll have to manually replace the grip % switches for
it to work on the command line.

The % switches need to be replaced with text. Also, I don't think
lame will batch encode the wav files like that. Try just one at a
time and see if that works for you:
lame -h -ms -b192 01-track.wav 01-track.mp3
I encoded most of my mp3's with grip and lame and used 192kbps, as
you're looking to do. I switched to VBR a little while back, but the
settings I had which worked quite well were as follows:
Encoder lame
Encoder executable /usr/bin/lame
Encoder command-line -h -b %b %w %m
Encode file Extension mp3
Encode file format ~/mp3/%A/%d/%t-%n.mp3
Bitrate 192
