You do realize that the ripping engine can be changed in grip.  The default engine will only produce .ogg files, but, if you install lame, and specify that grip needs to use lame, you will be able to produce mp3 files.  This is under Grip -> Encode -> Encoder tab in version 3.2.0 that I use on this machine.

Lame is best installed using the online repositories of your distribution, and I really cannot help you with specific instructions on how to add repositories, and installing packages from them.  All I can say, though, is that your distro's GUI should let you find this capability pretty easilly, and installation will be a breeze once you get it going.

As a final editorial, I personally will never buy an ipod, because of the no-ogg support, as well as the myriad of other restrictions to using the otherwise perfectly good memory they carry in them.
