Streaming with MKV

Hi All, I'm attempting to use mkv for broadcasting a live video and audio stream. It appears that either a single segment of an unknown size can be used or numerous segments of some discreet size can be concatenated together. However it is not clear how the segment(s) should be generated with regard to safely updating the mkv file on the server side as it's being simultaneously read by the client. Any help with this would be greatly appreciated.
