XForms is a standard defined using XML. This means that Xforms can be
used without XHTML. Actually, this is what OOo2.0 does : it includes
XForms in its XML. 

From What I remember, the inclusion of XForms into XHTML within
OpenOffice is not planned for these release of OpenOffice (which is I
think a pity, but developpers already have a lot of work ;-)

The Function for XForms support are still not all included. For the
moment, there are still many "issues" about it. The last time I tried, I
was able to save my document as an odt file.

And then, if you look at the content.xml in your odt file (which is a
zip archive), you willnotice the XForms part.

Did you tried to create your instance, and next to use the drag and drop
? Next, to feed the form with data, click on the button "design mode on
/off"

You can do so. This is already working. At the bottom of the data
navigator, there is a list "instance". If you click on it, you can
"add...". Next, just choose your XML document. I still didn't tryed if
it works with schemas.
