Dynamic Fields On Reports

Howdy - Is there a way to include date fields in the restrictions/parameters of the reporting? It would be nice if I could have a Dynamic Field for storing the date we received some required documentation. Then in a report I could say report on all tickets that received that documentation as a specific date! Any ideas?
