Can GS convert PS to EPS with preview on Mac OS X?

Dear list,

under Mac OS 9 it was possible to "print" to an EPS output file. Mac OS X
unfortunately no longer offers this option, but limits me to PS or PDF
output. I need EPS files for import into Filemaker, however.

In my research for a solution I think I ran across something along the lines
of "EPS on Mac contains PICT preview data". Is this true, and if yes, can I
us GS to produce (EPS + preview) from PS files, and if yes, HOW might I want
to do that?
