In Thunderbird, try editing as plain text. For the account I use for mailing lists, in the "Compositions & Addressing" settings, I have UNchecked "Compose messages in HTML format." I don't know any way to set this on the fly, but it's possible to set up a dummy "account," use a rule to filter on the "List-Id" header to move incoming messages to that account, and use plain text on that account.
