I think the easiest way to do this in Eclipse would be to use GroovyMonkey to talk directly to the Eclipse CallHierarchy object; Getting that to dump it's contents during an Ant build, however, would require running Eclipse on the build server. I've done that before, but it was a bit of a pain. I did fine something called Soot, which claims to be able to build CallGraphs, but it was pretty obtuse and the amount of time I've spent on this is far more than it's worth for my project.
