Hi Stani,

I would *strongly* recommend Subversion over CVS.  It just has some much 
needed features.

RapidSVN is a good gui subversion client available on both Windows and Linux, 
and makes Subversion very easy to use.

If possible, try and find a host that already has Subversion installed.
